America’s Regional Foods

I have an idea.

All this talk of “French Cuisine” and “national consciousness” has got me to thinkin’ about American Foods and “American” cuisine and what defines it. In the aforementioned introspection, I remembered that we here in the good ol’ US of A, have distinct cultural and regional cuisines.

Are they as distinct as those found in Italy, France or China? I’m not sure, but I do think it’s worth pointing out our regional differences, such as they are.

So I’m going to create a list of regional foods and dishes that were either invented, “discovered” or imporved upon in a certain region of the country. These are foods that each region should be proud of, even if it’s only style of pizza, or (lord help me) rocky mountain oysters.

And there’s no limit on the scope. For example, if one could make the argument for how Berekely, California has influenced restaurants (via Alice Waters), then that should go on the list. The Anchor Bar in Buffalo, New York should get mentioned for inventing Buffalo Wings.

I’ll keep the post updated as much as possible, probably as interest dictates. They’ll be specific posts covering various aspects of the list. It will be very interesting to see what comes of it.
