Chocolate Amaretto Cherry Ice Cream

A very easy and very decadent ice cream recipe from yours truly. Perfect for the Cuisinart Ice cream making machine.

  • 1 cup dried cherries
  • Ameretto (enough to cover cherries)
  • 2 cups heavy cream
  • 1 cup half and half
  • 1 cup Dutch Processed cocoa
  • 1 cup sugar
  • 1 tablespoon vanilla
  • 3/4 cups chocolate chunks (or chips will work in a pinch)
  • 2 1/2 oz. Ameretto

Place dried cherries in a bowl and cover with Amerretto. Allow to sit overnight. Mix cream and half and half. Add sugar, vanilla and cocoa and whisk together. Place in refrigerator for 60 minutes. Put in ice cream machine and run.

After 20 minutes, add cherries and any residual ameretto, including the additional the 2.5 ounces. Add chocolate chunks. Continue running machine until ice cream gets a thick consistency. Pour into bowl and freeze for at least four hours.

Makes at least one quart.
