Eat Your… Cranberries

Cranberries

When I think about holiday food, I can’t picture a meal that doesn’t have something containing cranberries — even if it’s just cranberry sauce from a can. There MUST be cranberries. That said, here are my three personal favorite cranberry recipes. Don’t be afraid to make them all; you won’t be disappointed.

Mom’s Orange-Cranberry Relish

I thought for years that this was a secret family recipe. My dad thought so too, until he asked my mom for it. Her response? “Just buy a bag of frozen cranberries and look on the back!” Hahaha. Just because it came from a package doesn’t mean it’s not damn good.

Ingredients

12-16 oz frozen cranberries (frozen only)
1 medium orange, cut into chunks, seeds removed (keep the peel)
3/4 cup sugar

Directions

Process all ingredients in a food processor until coarsely ground to your liking. Let sit for at least 1 hour before serving.

Smooth Cranberry Sauce

I love this because it’s strained and smooth, unlike many other traditional recipes.

Ingredients

1.5 cups sugar
1 cup water
4 cups (1 12-oz package) fresh or frozen cranberries

Directions

Pulse cranberries in a food processor until chunky, but not pureed. Boil water and sugar in a saucepan. Add cranberries, return to a boil, and cook 10 minutes. Remove from heat and strain off cranberry chunks (serve separately if you wish). Cool at room temperature then chill in refrigerator until ready to serve.

Aunt Nancy’s Cranberry Crunch

I had this last year and fell in love. The cranberry crunch is good too :)

Ingredients

1 cup uncooked oats
1/2 cup butter
1/2 cup flour
1 cup brown sugar
1 can whole cranberry sauce

Directions

1) Mix oats, flour, and brown sugar. Cut in butter until crumbly.

2) Place half the oat mixture in a greased 8×8 baking pan and press to make a crust.

3) Break up the cranberry sauce in a bowl then place over the crust.

4) Top with remaining oat mixture and bake at 350 for 45 minutes.

5) Serve with whipped cream and enjoy!
