This was short, sweet, damn easy to make, and tasty to boot. Sometimes I amaze myself. No pics, as Tara and I scarfed it down quickly.
- 1 lb. halibut fillet
- 1 Tablespoon solid butter
- 1 clove garlic (sliced)
- salt and pepper (to taste)
- 1/4 cup chopped cilantro
- 1/2 cup sake
- 1 lime
Preheat oven to 425F.
Take fillet and slice several openings(or slots) into the meat. Take butter, and cut into several pieces. Place pieces of butter and garlic into slots in the halibut. Salt and pepper the fish.
Take a large piece of aluminum foil and place fillet on left side of foil. Allow for plenty of room to the right. Top fillet with cilantro, coating it as mush as possible.
You are now going to create a baking ‘sack’ for the fish. Fold foil, from right to left, over top of fish. Take top inch of foil from furthest side away from you and fold three or four times, creating a seal. Repeat this action on the bottom edge of the foil. You should now have a foil ‘pocket’, with the halibut fillet inside.
Pour sake into the pocket. Fold over the open part of the pocket several times (an inch at a time) to seal completely. Place on cookie sheet. Poke one or two times with knife if your afraid of the pocket exploding, even though it wont.
Place sheet in over, and bake for 10 minutes. Open oven, and with a pair of scissors, cut open foil pocket, exposing the fish to the oven. Place back in oven and cook another 7-9 minutes. Remove and allow to cool for 5 minutes. Serve.
