While doing some reading on the history of the spice trade, a simple observation popped into my head.
Spices were for the rich, herbs were for the poor.
Logisitically, it makes sense, as there was great cost to bring spices from Africa, Central Asia, and Eastern Asia.
But herbs? Herbs one could literally find in one’s back yard.
Why haven’t I made that connection before? The Spice part I knew, but I never made the correlation between herbs and the lower classes. Not exclusively, mind you, as herbs would be available to all. But the lower classes had options to flavor their food.
