- 1 cup long grained black rice
- 2 1/2 cups cold water
- 1/2 teaspoon salt (optional)
Rinse the rice in cold water until the wash off runs clear. In a saucepan, combine the rice, water and salt. Cover and being to a boil over high heat. Reduce the heat to a gentle boil and cook until the liquid has been absorbed and the rice is tender (approx 25 minutes). Fluff with a fork. Dry the lid, cover the rice with a towel and the lid, and let stand for five minutes.
