This is my own recipe, just off the top of my head. It’s more in the carolina tradition of BBQ, rather than the Memphis. And tomorrow I’m going to complicate it even more by how I cook it.
- 2 quarts cider vinegar
- 1/4 cup salt
- 2 tablespoons cayenne pepper
- 3 tablespoons red pepper flakes
- 1 cup light brown sugar
- 1 tablespoon chili pepper sauce
- 6 cloves of garlic
- 10 pearl onions
- Zest from one Orange
In a large bowl, mix together cider vinegar, salt, cayenne pepper, red pepper flakes, light brown sugar, onions, garlic, orange zest and hot pepper sauce. Stir until salt and brown sugar have dissolved. Allow the mixture to stand, covered, at least 3 hours. Use as a marinade or BBQ sauce.
