- 4 oranges
- 2 limes
- 2 lemons
- 1 cup sugar
- 2 cups water
Wash oranges, limes and lemons. Cut each fruit in half and then cut each section into 1/4-inch strips. Cover with cold water. Heat to boiling. Boil 10 minutes. Drain. Repeat 3 times. Drain. Cover with boiling water and simmer until tender. Drain.
Prepare a heavy syrup, using 2 cups sugar and 1 cup water. There should be sufficient syrup to cover sections of fruit peel. Cook slowly until tender. Allow to stand in sirup overnight. Drain thoroughly.
Remove any remaining sections of fruit, leaving the peel. Roll peel in granulated sugar. Place on cake rack. Dry in very slow oven (250 F) until surface is firm.
(NOTE: To add some festive Christmas Colors, before cooking in syrup, Color 1 portion of syrup red, 1 portion green, and leave 1 portion clear. Add 1/3 of fruit to each portion of syrup. Simmer fruit as mentioned above before setting in syrup overnight.)
