As poached chicken seems like a rather lame attempt to add content, let me add the following salsa. I haven’t added a salsa lately, and this one seems appropriate. The cucumber adds a nice crunch, and holds the flavor of lime and salt quite well.
- 2 large tomatoes, diced
- 1/2 white onion, diced
- 1 cucumber, seeded and diced
- 2 jalapeno peppers, seeded and diced
- 1 Tablespoon salt
- 2 Tablespoons lime juice
In a glass bowl, add the tomatoes, onions, cucumber and peppers. Toss and then add salt and lime juice.
Voila, instant salsa!
